Winemaker Notes
In 1999 we harvested most all the Cab vineyard in the middle of the night! The goal was to deliver night-cooled fruit to the winery for early morning crushing in order to maximize the ripe, fresh fruit flavors from the resting vines. Additionally, our once-young replanted vines are now maturing and producing grapes of greatly improved depth and complexity. To top it off, we are harvesting later in the season than in previous vintages as we seek the holy grail of optimal ripeness.
Though still relatively young, the resulting wine, shows strikingly improved approachability and ripe flavors of juicy black cherry, raspberry, chocolate and spice. Aromatic of cherry, spice, and bay. Gentle tannins give way to a long, rich finish.
Cabernet Sauvignon 99 % Cabernet Franc 1 % Barrel Aging: 18 months in French chateau barrels
