    Winemaker Notes

Our vision for Symmetry is to produce a harmonious wine, with full, rich fruit, powerful structure, mature tannins, elegant balance and a long supple finish. We begin in the mountain and hillside vineyards of Alexander Valley where well-drained, volcanic soils combined with warm, sunny days and cool nights provide ideal growing conditions for Bordeaux varietals. As a red meritage, we select the best cabernet sauvignon, merlot and cabernet franc fruit from these vineyards, then ferment and age each lot separately in our finest small oak barrels for two years. Each barrel is tasted individually and graded. Only the highest graded barrels are considered for the final blend. Once this blend is completed, we age the wine in the bottle for another 2 years prior to release.

The 1999 growing season was moderately cool through August, providing a gradual progression of deep flavor development and even ripening. September and October provided the warmth in the late season we needed to achieve full flavor maturity and ripening.

The 1999 Symmetry greets you with an opulent bouquet of blackberries, ripe dark plums and sweet spices. The wine opens generously on the palette with layers of blackberries, cassis and plums framed with accents of dark chocolate and sweet spices. The finish is long, rich and supple.
