This 2000 Cabernet Sauvignon Reserve is the first vintage made in our new To Kalon Cellar and represents our highest values - our finest vineyards, our respect for both tradition an innovation, and our unwavering passion for excellence.
The To Kalon Cellar brings to life my vision of a winemaking facility equal to the superior quality of the grapes from our historic To Kalon Vineyard. The Cellar's gentle gravity-flow design includes 56 French oak fermentation tanks. The return to oak fermentation enhances the aromas, flavors and complexity into our finest Cabernets, and imparts both immediate approachability and incredible aging potential.
As always, the fruit for this Cabernet Reserve comes from our finest vineyards, including over 50% from our To Kalon Vineyard and a total of 84% from the Oakville appellation. These vineyards consistently produce the most expressive and complex wines; it's no coincidence that they hold some of Napa Valley's oldest vines, which produce powerful, concentrated fruit.
This year also marks my father's 90th birthday, which gives us even more reason to celebrate and raise a glass with you. May this wine bring grace to your table and zest to your life.
The Wine Advocate - "There are 18,000-20,000 cases of the 2000 Cabernet Sauvignon Reserve, one of the finest efforts from this difficult vintage. The wine is a blend of 80% Cabernet Sauvignon, 14% Cabernet Franc, and the rest Merlot and Malbec. It exhibits a deep purple color as well as an elegant, sweet perfume of black currants intertwined with licorice, loamy soil, and hints of mints as well as new oak. It is ripe, long, and structured, with medium to full body, outstanding purity and concentration, and a persistent finish. This elegant Cabernet will be at its finest between 2006-2020.
Wine Enthusiast - "Oak dominates in the wine’s youth, with scents of wood and smoky earth. In the mouth, rich and dense. The tannins are thick, but soft and melted. Acidity kicks in on the finish. Structurally superb, but curiously lean and herbal in flavor, as thought it were deliberately picked early. No doubt meant for the cellar."

It's hard not to think of Napa Valley when thinking of California wines. The region is, after all, the one that brought world recognition to California wine making. The area was settled by a few choice wine families in the 1960's who bet that the wines of the area would grow and flourish. They were right. The Napa wine industry really took off in the 1980's, when vineyard lands were scooped up and vines were planted throughout the county. A number of wineries emerged, from large conglomerates to small boutiques to cult classics. Cabernet Sauvignon is definitely the grape of choice here, with many winemakers also focusing on Bordeaux Blends. Whites are usually Chardonnay and Sauvignon Blanc.
Notable FactsWithin the Napa Valley lie smaller sub-AVAs that lend even more character specifics to the wines. Furthest south is Carneros, followed by Yountville, Oakville & Rutherford. Above those two is St.-Helena and finally, just grated an AVA, Calistoga. These areas are situated on the valley floor and are known for creating rich, smooth Cabernet Sauvignon, Merlot and Chardonnay. There are a few mountain regions as well, nestled on the slopes overlooking the valley AVAs. Those include Howell Mountain, Stags Leap and Mount Veeder. Wines from the mountain regions are often more structured and firm, benefiting from more time in the bottle to evolve and soften.

While there were interesting toasty notes on the nose and tartness on the palate, I thought I had to be missing something. New Year's inspired me to open another bottle, and I got all I expected the first time...and more. There were still those toasty notes on the nose, but now with some dried cherry. About an hour after decanting, this wine had a great silky mouthfeel with juicy cherry and understated tannins that gave this wine great structure but with everything in balance.
