Winemaker Notes

Redbank's philosophy of identifying parcels of exceptional fruit and using small batch winemaking techniques is very evident here. Cool climate King Valley fruit, with its fine-grained tannins and aromatic fruit flavours, has been combined with fruit from the warmer King Valley floor adding richness and complexity. The 2000 Percydale Cabernet Merlot is a very individual wine, which captures the unique terroir of the vineyards.

This wine is deep purple in colour with crimson red hues, the result of a cool dry Spring. Powerful aromas of ripe black currant, red berry fruits and mint with integrated toasty vanillin oak in support are evident. The palate exhibits sweet red berry fruits, a result of cool fermenting (20-24 degrees Celsius) the Cabernet Sauvignon and blending a small percentage of warmer King Valley floor fruit. Warm fermenting (26-30 degrees Celsius) the Merlot has helped to craft layers of fine-grained tannin, which integrates beautifully with the toasty vanillin oak.

The 2000 Percydale Cabernet Merlot will improve with age over the next 4-8 years with correct cellaring. It is a perfect accompaniment to any full flavoured meat dish such as venison or kangaroo, especially those with a rich sauce.
