Powers Mercer Ranch Cabernet Sauvignon 1997

This Cabernet from Mercer Ranch was fermented with Prise De Mousse yeast. After fermentation, the wine was aged in American and French oak for 23 months before being bottled. The resulting wine is deeply complex. Enticing deep ruby color and spiced plum bouquet gave way to bold, structured flavors featuring black plum and spice with overtones of oak and hints of cedar. Very drinkable now, but will continue to improve with some aging.
