The Paillards blend this wine from Chardonnay (70 percent) and Pinot Noir (30 percent); the color comes from Bouzy rouge (six percent of the overall blend) from 45-year-old vines. That also lends the wine an essence of red fruit, gentle scents of raspberries and strawberries that last. As succulent, creamy and cushioned as this wine may be, it has clarity and drive.

Open-knit and chalky, this minerally rosé frames hints of white raspberry, smoke, biscuit and preserved lemon with firm acidity and a light floral overtone.
All of their champagnes are produced from their grapes grown on one of the most prestigious Grand Cru terroirs in Champagne: Bouzy. Our vineyards make up 11 hectares (28 acres), composed of 60% Pinot Noir and 40 % Chardonnay.
