Winemaker's Notes:
Number 5 on Wine Spectator Top 100 Wines of 2004!
The 2001 Les Pavots (72% Cabernet Sauvignon, 16% Merlot, 10% Cabernet Franc, and 2% Petit Verdot) is a thick, juicy, inky/purple-colored effort revealing compelling aromas of chocolate, licorice, cassis, and scorched earth. Deep and full-bodied, with a voluptuous texture, tremendous purity and density, it is the finest Les Pavots produced in the last four or five years. It should drink well young, yet age for 15+ years. |
