The Thomas Hyland Cabernet Sauvignon is a shining example of the benefits of multi-regional blending. Cabernet sauvignon from the southeast of South Australia, including Coonawarra, often features prominently, bringing perfume and generosity of flavour on the palate; while the addition of ripe, powerful McLaren Vale fruit and elegantly proportioned Cabernet enhance the overall style.
The classic varietal elements of ripe blackcurrant/cedar aromas and fine-grained tannins are also present, to produce a wine with a firm, yet supple structure, subtle oak character and rich depth.
While Penfolds Thomas Hyland Cabernet Sauvignon is made for relatively early drinking, the overall fruit concentration and firm tannin structure will allow the wine to cellar for the medium term.
"Firmly sturctured with simple blueberry and black currant flavors, this is a tight, austere cabernet to serve with roast beef."

"The 2009 Thomas Hyland Cabernet shows classic Penfolds styling in its robust mouthfeel and assertive flavors. Cherry, mocha and cedar notes turn a bit tart on the finish; drink now and over the next few years."
