Polished, vibrant and distinctive, our 2012 Project Paso Cabernet Sauvignon features an aromatic nose lled with blackberry, sweet leather and undertones of smokiness. Hints of Belgian milk chocolate, nutmeg and black pepper add complexity to the supple fruit prole. Black currants and fresh g compromise the core of this rich wine, while mochascented oak lingers throughout the wonderfully tannic nish. The mouth-watering acidity in the mid-palate will pair nicely with many cuisines. Enjoy with succulent braised short ribs, pan roasted veal chops with chanterelle mushrooms or lasagna with a hearty Bolognese sauce.

    Project Paso, California
Project Paso is an exciting venture for the Don Sebastiani & Sons. While the Paso Robles area has been producing wine for over 200 years, the area is just now gaining recognition among wine aficionados for its distinctive character. In 1990 there were fewer than 20 wineries in Paso Robles. Today there are more than 200—and the area is now the fastest-growing AVA in California.

For over 30 years, Don Sebastiani & Sons have been partnering with well-known Paso Robles grape-grower Sam Balakian to source the grapes that we’ve used to add depth and complexity to many of our California wines. As interest in the region continued to grow, they knew the time was right to craft a Paso Robles-centric family of wines that would truly showcase this emerging region. Whenever the idea came up, they would casually refer to it as "Project Paso". When the wines were finished, we just couldn’t imagine calling them anything else, and with that Project Paso was born.

As Paso Robles, California has soared in number of wineries and gained in popularity, Cabernet Sauvignon has firmly taken root as the region’s number one varietal. Alone, it accounts for just over 40% of plantings and is grown throughout both the western and eastern sides of the appellation. Though viticulture here dates back to the 18th century, Cabernet Sauvignon didn’t emerge as a significant grape here until the 1970’s. But since then it has definitely made up for lost time.

Legendary winemaker and consultant Andre Tchelistcheff first recognized Paso’s potential with Cabernet Sauvignon in the early 1960’s. The calcareous soil and dramatic diurnal temperature changes of Paso’s westside particularly intrigued him. Today modern winemaking techniques and focused experimentation with various clones, rootstocks and vineyard strategies optimize the region's ideal combination of soil and climate to deliver the best fruit possible.

The results are evident in the glass. Paso Robles Cabernet Sauvignon can be mesmerizing, with rich aromas and flavors of blackberry, cassis, black cherry, graphite, toasty oak, vanilla and spice. The structure, balance and unbridled opulence of these wines impress from first sip to last. Not surprisingly, Paso Robles Cabernet Sauvignons have steadily grown in reputation, not just in the U.S., but around the world.
