The distinctive black currant aroma and flavour of Cabernet Sauvignon is like a touchstone in the winery and in the tasting glass. We have missed having it around and am looking forward to serving it with some slow cooked lamb meals over the cooler months. The 2012 Reserve Cabernet tastes complex and exciting with clear varietal definition.

Deep garnet-purple in color, the 2012 Reserve Cabernet has a nose of creme de cassis, dark chocolate and crushed cloves with hints of cedar, black pepper and cumin. Very big, very full and very rich in the mouth to the point of being just a bit hot, it has a medium to firm level of chewy tannins and well-placed acidity. It finishes long and a touch bitter. Drink it now to 2022+.

The darling of the Australian small winery scene, Noon has a great following both in Australia and in particular the US. Drew Noon produces some unique wines packed with ripe red fruit and often high levels of alcohol. Drew Noon took over operating the family owned Noon winery after spending time as Winemaker at Cassegrain and other ventures in Victoria.

The Eclipse and Reserve shiraz can command high levels of capital increase and are definitely wines to hold on to (if you can get them).

A noble variety bestowed with both power and concentration, Cabernet Sauvignon enjoys success all over the globe, its best examples showing potential to age beautifully for decades. Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbecand Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.

Known for opulent red wines with intense power and concentration, McLaren Vale is home to perhaps the most “classic” style of Australian Shiraz. Vinified on its own or in Rhône Blends, these hot-climate wines are deeply colored and high in extract with signature hints of dark chocolate and licorice. Cabernet Sauvignon is also produced in a similar style.

Whites, often made from Chardonnay or Sauvignon Blanc tend to be opulent and full of tropical, stone and citrus fruit.
