Winemaker Notes

The 2008 Unfiltered Cabernet Sauvignon opens with notes of black fruits, cassis and black currants. The fruit forward aromas are pronounced in the youth of this wine which promises elegance as complex herbal layers of juniper and bramble characteristic of Spring Mountain follow on the nose. Vanilla and Chinese five spice flavors as well as similar notes mirrored from the nose are introduced on the huge, plush, powerful palate that has a lingering bittersweet chocolate finish.

Winemaker Chris Millard suggests pairing the complex layers of flavors in this Cabernet Sauvignon with a grilled New York steak. It is also a perfect accompaniment to roasted game meat like boar.

Blend: 79% Cabernet Sauvignon, 13% Petit Verdot, 6% Syrah, 1% Merlot, 1% Malbec

    The 2008 Cabernet Sauvignon reveals more creme de cassis and black currant characteristics along with good acidity, sweet tannin and a Bordeaux Right Bank aromatic and flavor profile. Soft, round and less structured than the vintages of 20 years ago, it should drink nicely for 10-15 years.

Newton was founded in 1977 by English businessman Peter Newton and his Chinese wife Su Hua. Peter Newton was already renowned as a pioneer of winemaking in the Napa Valley, having founded the Sterling Winery near Calistoga in the 1960s. The Newtons transformed one square mile of rolling hillside in Spring Mountain into one of the Napa Valley’s most prestigious estates, whose wines have graced the official dinners of several US presidents.

The Newton estate encompasses 170 acres of prime Napa Valley terroir, distributed over four separate, wholly owned vineyards: Spring Mountain, Yountville, Mount Veeder and Carneros.

Newton is renowned for producing wines that are uniquely characterful expressions of varietals emblematic of the Napa Valley, notably Chardonnay and Cabernet Sauvignon.
