Somm Note

Winemaker Notes

The 2012 Mossback Cabernet Sauvignon is a big, rustic, muscular red. The temperate growing season shows in the enticing aromas of blackberry, leather and pipe tobacco. The flavors are revealed in layers of black cherry, dark chocolate, barrel spice and firm, chewy tannins. Thick and velvety, bold yet refined, Mossback Cabernet Sauvignon will age gracefully for several years. Pair with herb-crusted lamb or any robust, full-flavored entree.

Blend: 80% Cabernet Sauvignon, 20% Merlot

Mossback is part of the Matchbook Wine Company’s family of brands. Mossback is an old fashioned term for farmer. The Giguiere family has had a long history of farming, and for the Mossback brand has sought fruit from some of the most renowned farmers in the Russian River Valley. Mossback also speaks to the cool weather that contributes to the unique quality of Chardonnay and Pinot Noir from the coastal region.

A noble variety bestowed with both power and concentration, Cabernet Sauvignon enjoys success all over the globe, its best examples showing potential to age beautifully for decades. Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbecand Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.

A Sonoma sub-appellation whose boundaries cover the northeastern corner of the Russian River Valley AVA, the Chalk Hill growing area is named after its unique chalky and white, volcanic ash soils. This terrain has proven successful with white varieties, namely Chardonnay and Sauvignon blanc.
