Small portions of individual lots were chosen for their contributions to this wines complex, ripe melon and new hay aroma and its concentrated, yet balanced, texture. Winemaking methods that obscure the pure intensity of ripe Sauvignon Blanc varietal character were avoided. Malolactic fermentation was prevented and, while the wine was on its lees during its time in barrels, those lees were not stirred.
