The philosophy of our Central Coast Cabernet is to create a flavorful style with ripe fruit and soft tannins. The key is to combine drinkability and complexity. Wines from the individual vineyards are aged in new and used oak barrels from numerous French and American coopers. Excessive wood character is avoided on order to prevent masking of fruit. Barrel aging, however, is important in the creation of the supple roundness of the final blend.
Zabala Monterey Cabernet is a full, dark wine with strong pepper notes. This component gives a Bordeaux-like structure to the blend. As a whole, each of the Paso Robles Cabernets display ripe, jammy flavors that are characteristic of the region. Each vineyard displays its own personality of color, spice and fruit.
