Winemaker's Notes:
Our 2007 Cabernet Sauvignon is dark red with a violet hue. Aromas of bing cherry, plumb, all spice, cinnamon, leather, and a touch of forest floor fill the glass. A soft, fruit forward entry combines with balanced acidity and low alcohols to coat your mouth with a multitude of flavors. Layers of red and black fruit segue into a finish accented by vanilla, caramel and a hint of butterscotch from the new American Oak. Soft, but present tannins once again allow this young JUSTIN Cabernet Sauvignon to be approachable immediately.
Pair with properly seasoned roasted, grilled, sautéed meats, poultry and game. Best with dishes such as lamb loin with red wine essence, filet mignon and roasted duck breast. Cheeses that match this wine well are sharp cheddar, Abbaye de Belloc, Danish blue, aged gouda, reblochon and San Andreas. |
