As a wine, Vaudésir has a lovely, limpid, slightly green-golden hue. The aromas are often reminiscent of coriander and fern, with a somewhat lemony scent. Round on the palate, it has a long, complex finish. This is a wine to keep: its aging potential is quite good.
"The Drouhin 2007 Chablis Vaudesir displays greater concentration – above all of fusil, chalky, saline, savory, and smoky "mineral" aspects, which utterly suffuse it – than any other of this year’s Drouhin Chablis bottlings. The herbal aromatic pungency and the zesty expression of citrus add hints of invigoration, but the overall impression is one of serenity and refinement, incorporating hyacinth and heliotrope perfume in liquid form. Ripe white peach and deep suggestions of malt and lobster bisque – allied to creaminess of texture – add to the seductive, layered presentation of this wine, which should merit following for 8-10 years.

"Reticent at first, this yields little beyond hints of spice and flecks of minerals. The spice broadens with air, the wine still relatively light in weight but with a delicate richness that sustains it. Not for now: This needs ten years of age before it will show itself, but all indications are that it will be lovely. Drouhin owns 3.5 acres in this cru and has farmed it under biodynamics since 1999."
