We strive for the style of Burgundy Chablis, by not undergoing malo-lactic fermentation we preserve the fresh, clean acid on the palate. Sur-lie aging balances out the acid while fermentation is done in stainless steel tanks. This style of winemaking preserves the purity and flavors of the fruit and leads to an elegant, naturally balanced wine.
Fruity & Smooth
This has become my girlfriend's and my favorite wine for sitting on the patio on a warm summer's eve. Not as tart as a Sauv Blanc, but crisp, interesting and refreshing without all of the vanilla/butter overtones of overly-oaked Chards. I think the Joel Gott Chard is superior to other California & Oregon unoaked Chards I've tried.
