Winemaker's Notes

Our first tastings of the vins clairs in cask showed a high standard of quality throughout the regions and the grape varities. The wines were racked promptly to retain the fine lees and followed by several months of weekly battonage. Thereafter, we took advantage of the last cold days of winter to clarify the wines naturally. The subsequent tastings confirmed our first impressions and at the beginning of June we decided to produce an assemblage consisting of the Chardonnays from Avize Champ Cain (50%), a selection of Pinot Noirs from Verzenay(205) and Dizy (20%) and the Pinot Noirs from ZY Vauzelle Terme (10%).

Critical Acclaim

"Bright gold. Complex, smoky scents of dried pear, tangerine, honey and buttery brioche. Supple and broad on entry, then more taut in the middle, offering juicy citrus and orchard fruit flavors and hints of smoke and dried fig. Ready to drink but this also has the energy to age. Finishes gently chewy, smoky and very long. This got a low dosage of 2.5 g/l."

Today, nearly 75% of Champagne...
