Winemaker's Notes:

Inniskillan Icewine is a gift from winter to wine lovers. Harvested at the pinnacle of Canada's crisp winter, the grapes are naturally frozen on the vine and picked when the temperature drops below -10 degrees Celsius. The removal of ice crystals, separated from the frozen grapes during pressing, concentrates the juice into a delicate nectar to achieve the rich and alluring specialty known as Icewine.

This vintage shines with an alluring assortment of fresh nectarine, papaya, lychee, tangerine and orange blossoms. These exquisite fruit flavors, combined with invigorating acidity, offer multiple layers of balanced pleasure.

Food pairing suggestions: Fruit-based desserts based on tropical or stone fruits, citrus, pear, and apple. Pairs beautifully with Foie Gras — pan seared or terrine — and spiced Asian cuisine. Try cheeses including rich blue veined or selected cream based such as Roquefort, Saga, Cambozola, Ermité, Le Ciel de Charlevoix, le Bleu de la Moutonnière, Bleubry, Cayer, Cabrales, Devon cream and Gorgonzola.

About Inniskillin:

On July 31, 1975, Inniskillin Wines incorporated and its founders were granted the first winery license in Ontario, Canada, since 1929. Established in Niagara-on-the-Lake and taking its name from the early history of the area, Inniskillin was founded upon and dedicated to the principle of producing and bottling outstanding wines from select wine grapes grown in the Niagara Peninsula.

The first Inniskillin winery was housed in an old packing shed at the family nursery, two kilometers from their current location. As the winery grew, they needed more space, and in 1978, they relocated to their present site, The Brae Burn Estate.

The historic Brae Burn Barn, constructed in the mid-1920s, houses the winery boutique. The main floor consists of the retail wine boutique and tour center, while the upper level loft, maintained in its original open-beamed structure, features a training center and demonstration kitchen for guest chefs, and a gallery.

Inniskillin presently has vineyards in the Niagara Pennisula in Ontario and the Okanagan Valley in British Columbia.
