Winemaker's Notes

The 2005 CASK Cabernet has layers of ripe, red cherries, plum, vanilla, cocoa, and toast. The wine is remarkable now, especially if served with intensely flavored meats or cheeses, but it also can be aged for 10 years or more. This is a monumental vintage for CASK.

Style: Smooth & Supple
Pair with: Pasta > Pesto, Pasta > Vegetable
Great Blue Fruit flavor with a touch of cedar. Agree with other ratings that it needs to breath (about 30 minutes to one hour). Has the tannic structure to stand up over time (5-7 more years). Wine making style consistent with past vintage. If you love this wine, like me, you will always love this wine, especially in superb vintages. Wish I ordered more when I had the chance. Eagerly awaiting the 2007
