    Winemaker Notes

    Intense aromas of cassis, tobacco and coffee are forward in the nose, with hints of currants, olives, and dark chocolate. Some vanilla is evident from aging in the American oak barrels. Along with the rich flavors expected from the nose, there is the hint of mint and dark berries that stays on the palate. Drinking well now, the wine will benefit from aging for another 3-5 years. Excellent food pairings include Grilled Swordfish, Leg of Lamb, Beef Bordelaise, and most red pasta dishes.

    Hahn Estate wines feature grapes sourced from estate vineyards in the Arroyo Seco appellation of Monterey County. A hidden gem, located below the Santa Lucia Highlands, these vineyards sit on a gravelly alluvial plain with rocky soils fostering excellent drainage. Cool winds channeling South from Monterey Bay through the Salinas Valley ensure gradual ripening, full development of vibrant fruit flavors and bright acidity. Arroyo Seco, one of the smallest AVAs in the state, boasts one of the longest growing seasons. In this region, warm and sunny days are followed by cool afternoons once wind blowing in from the Monterey Bay sweeps through the Salinas Valley. This daily cooling effect allows for longer hang times and creates ripe fruit.

    Covering the most vine acreage in the state compared to any other red wine variety, Cabernet Sauvignon produces as much wine in California as Merlot and Pinot Noir combined. The state’s diverse terrain and microclimates, as well as the freedom of its winemakers, allow for an incredible range of wine styles from this single grape.

    California’s most famous region—and especially for Cabernet Sauvignon—is the acclaimed Napa Valley. While Cabernet is successful throughout the world, rarely has it achieved such merit as it does from the Napa Valley. At this point the two are so intrinsically linked that it is difficult to discuss one without the other.

    Napa’s closest neighbor, Sonoma County, does an impressive job keeping up with Napa’s fame and glory. Alexander Valley, Sonoma Mountain, Moon Mountain and Knights Valley contribute to the lot of some of California’s top-rated Cabernet Sauvignon.

    Lake County in California’s North Coast has become a focus for some of Napa’s more respected growers. From the Central Coast come iconic examples of classic California Cabernet; Lodi and the Sierra Foothills are great budget-friendly sources of amicable Cabernets.
