Ice Wine is one of the rarest and most difficult wines to produce. The grapes are left on the vine long after the regular harvest, until they are frozen by frigid winter temperatures. The grapes are then harvested and pressed before they thaw to produce a very sweet, intensely flavored dessert wine.
