Winemaker's Notes

WINEMAKER NOTES Our Fetzer Valley Oaks Cabernet Sauvignon is dark garnet in color, with a rich nose of blackberry, cherry, cassis, spice and vanilla aromas. On the palate, the wine offers ripe blackberry, chocolate, and cinnamon, enhanced with gentle vanilla flavors. Tannins are firm in this medium-bodied Cabernet Sauvignon, with pleasant toastiness emerging on the finish. WINEMAKING The wine was fermented from seven to fourteen days at 85ºF. After gentle pressing and undergoing malolactic fermentation, the wine was moved to barrels for aging. All of the wine was aged 12 months in a mix of American and French oak barrels, 30% new and 70% one-to-three-year-old barrels. In 1958, lumber merchant Barney Fetzer bought a ramshackle ranch in Redwood Valley as a home for his wife and a soon-to-be family of eleven children.
