Winemaker's Notes

This rich, elegant Cabernet Sauvignon is subtle blend of three of the five classic Bordeaux varieties, grown in TreMontes shallow, rocky mountainside soils. The vines were planted at an elevation of 1,300 feet, where they enjoyed a south-east exposure to ensure maximum ripeness. The low per-acre yield, less than three tons, adds an impressive depth and concentration of flavor intensity. The wine was fermented in stainless steel tanks and aged for almost two years in French oak barrels. Classic earthy Cabernet flavors of eucalyptus, mint and cassis are complemented by luscious flavors of dark cherry and plum.
