Ecco Domani Pinot Grigio is made from 100% varietal Pinot Grigio grapes, hand harvested at optimal maturity levels, 20-21 brix. The wine was made "in bianco," or "in the white," referring to the vinification process that transform the blue-gray colored Pinot Grigio berries into a delicate white wine. A soft pressing was employed to enhance flavor extraction while deriving minimal color from the skins. Fermentation was temperature controlled at 20 degrees Celsius. A selection of specific pure yeasts was used for inoculation. The wine was left to settle and was then cold stabilized, filtered and bottled under cold sterile conditions.
This Pinot Grigio has a brilliant, clear straw color and a floral nose, with delicate aromas of fig and honeysuckle fruit. The wine displays crisp, subtle flavors, with excellent balance and a snappy finish. With its harmonious flavors and crisp acidity, this wine is an excellent match with seafood, poultry, vegetarian pasta dishes, and fresh herbs such as basil, dill and tarragon.
