Winemaker Notes
Characteristics: Citrus (in particular lemon and grapefruit) aromas. With ageing, the evolution of the aromas move towards licorice and mineral.
Food Pairings: A high-class wine which accompanies admirably fish as well as shellfish.
Paul Ginglinger is a historian and a meticulous winemaker. He owns 12 hectares of vineyards in Eguisheim and is a 12th generation of winemaker, his family being local vignerons since 1610. Eguisheim is one of the top Alsace villages, the vineyards here being some of the sunniest and driest in all France due to the protection from the Vosges Mountains to the west. Ginglinger's holdings include land in Eguisheim's two Grands Crus. Pfersigberg is an ideal south-facing suntrap. Eichberg is slightly lower down the hill, the slope more gentle, southeast-facing with a particularly favorable microclimate.
