The Hermine d'Or is a reserve blend of the best wines, which is submitted to an independent blind tasting panel of wine experts for ratification. It is also bottled after 6 months on the lees, but is held back a full year before release, allowing the development of more complexity and body.
The town of Vallet is where many of the best Muscadet estates are located. Domaine des Dorices is one of these, producing about 20 000 cases from 38 hectares. Dorices is one of the few estates producing a genuine "organic wine", no chemical fertilizers are used on the property. Parker has said of this wine :"This is a surprisingly large bodied, flavourful Muscadet with a zesty, stony, lime/gin and tonic - scented nose, excellent flavours, good definition, and a crisp, fresh finish. Drink it with your favorite oyster dish". The 1994 Cuvée Choisie was awarded a silver medal by the Beverage Tasting Institute in the USA.
