There's an elegant weave to the aromas of this bottling, with soy, dried dill, peppercorns, crushed gravel and a touch of cedar laced throughout the black fruit on the nose. Perfectly rounded black currant, black cassis and black cherry fruits show on the sip, which is leveled by violets and pencil shavings.

COMMENTARY: A remarkable wine from one of the most serious wineries in Paso Robles—even the most knowledgeable wine experts have yet to understand the limits of this diverse viticultural area. Paso—as locals call it, is still on a growth curve. I have visited the property and was amazed by all of the work the family has put into this project. TASTING NOTES: The 2013 Daou Reserve Cabernet Sauvignon is quite a massive wine. Simultaneously opulent and elegant, the wine, packed with generous berries, earth, and mineral notes, is made for current and future enjoyment. This would make a delightful pairing with an aged Stilton in a dozen years. (Tasted: May 9, 2016, San Francisco, CA)

The 2013 Cabernet Sauvignon Reserve (100% Cabernet Sauvignon) is deep, nicely concentrated and full-bodied, with beautiful freshness and focus in its cassis, black currants, damp earth and chocolate aromas and flavors. It's currently more tight and reserved than the straight Cabernet release and will be better in another year or two. Rating: 92+

DAOU Mountain stands alone at an elevation of 2,200 feet, rising from the heart of the Adelaida District in the rugged coastal range west of Paso Robles. The steep slopes here reach up to 56 percent, with uniform exposure to the elements across the estate. It is a terroir of power, purity, and symmetry with every natural asset necessary to pursue the perfect Cabernet Sauvignon—including calcareous clay soils that emulate Bordeaux’s Right Bank and a climate that mirrors St. Helena.
