"The" Cab was hand picked and sorted fruit from the best vineyards in Lodi. The Cab started fermentation in stainless steel tanks and used an aerative pump over system to extend the maceration cycle for better richness and mouthfeel.

Blend: 86% Cabernet Sauvignon, 9% Merlot, 4% Petit Verdot, 1% Cabernet Franc

    The 2010 Cosentino Winery THE CAB is pretty good and would do famously with a salad of butter lettuce, charred steak and bacon bits, light lemon dressing and fresh cracked black pepper. Medium garnet ruby color; fruity and very woody in the nose; medium bodied, firm on the palate; dry, medium acidity, good balance; tar and black fruit in the flavors with a hit of wood; medium finish, wood tannins in the aftertaste. Cosentino Winery is renowned for creating the first designated and licensed Meritage wine, Bordeaux inspired blend that set the standard that others would follow in Napa Valley.

Lodi is justifiably lauded for its old vine Zinfandels, but it is a production powerhouse when it comes to Cabernet Sauvignon. Lodi and its surrounding area (San Joaquin County) rank third in the state in acres planted to Cab, behind Napa and Paso Robles/San Luis Obispo County. But in total tons crushed Lodi is number one by a wide margin, surpassing Napa and Paso combined. In other words, Lodi produces more Cabernet Sauvignon than anywhere else in the U.S. This more volume-driven approach to viticulture makes possible the value-oriented bottlings that so many wine drinkers reach for on an everyday basis. These offer the varietal’s classic profile of dark fruit, oak influence, subtle herbal and green pepper notes and solid structure.
