The cool climate Climbing Chardonnay exhibits vibrant fruit followed by intensity and length. The fruit was harvested in the cool night to avoid any oxidation and assist in the cold settling. Once racked, the juice was transferred to French barriques for fermentation. After fermentation, the lees were stirred adding complexity to the wine. This Chardonnay received minimal handling so that the purity of fruit shines through.
