The 2004 Brookman Cabernet Sauvignon, highlights the quality of the fruit that is produced from sixty-six year old vines, planted on their own roots in ironstone gravel. An inky wine, crimson in color. A classy perfumed aristocratic nose of pure Cabernet Sauvignon. Extraordinary aromas of black currents and high quality French oak scented bouquet. Elegant flavors of black fruits, smoky herbs, eucalyptus and vanilla.

Brookman Cabernet Sauvignon grapes are from vines planted in 1940 on their original rootstock. The unusually dry growing season resulted in even smaller yields than normal, under two tons per acre. All of the vines are dry-farmed and hand pruned. Picking took place over several passes to ensure optimal ripeness of the fruit. Grapes were hand picked in order to allow for whole berry fermentation. This process allows us to better retain the grape's varietal essence and minimize bitter tannin extraction in the wine. The juice is fermented using wild yeast; temperatures were kept 32 degrees Celsius with an extended maceration. All of the pressings are returned to the barrel. No fining or filtration is allowed ensuring the purest expression of the grape and vineyard that will age well and complement the dining experience.Brookman Cabernet Sauvignon is aged in barrels that are hand selected by the winemaker. The French barrels used are 100% new, tight-grained oak from Nadalie. Barrels are seasoned for three years before being toasted to medium char over a cool flame for several hours to minimize blistering. Brookman Cabernet Sauvignon spent 18 months in barrel. The resulting wine is extremely balanced and integrated; when decanted it is ready to consume now or can age for 15 years.

    The inky/ruby/purple-hued 2004 Cabernet Sauvignon Brookman Vineyard exhibits classic aromas of cassis and graphite along with a well-balanced, rich, full-bodied, intense personality. One of the estate’s more forward, elegant offerings, it is best drunk during its first 12-15 years of life.

    Shows tons of beautiful red and black berries on the nose, which carry over to the palate in the form of juicy, perfectly ripe flavors tinged with just a hint of graham cracker. Acidity is lively; can be enjoyed now through 2011.

Clarendon Hills is a small family-run winery based in Clarendon, South Australia. The company was founded by biochemist, Roman Bratasiuk, in 1990. The story of Clarendon Hills is one of passion, dedication and commitment to exception wine. It all began when this biochemist and wine lover decided to produce his own wine. Though he'd never trained as a winemaker, Roman let himself be guided by his refined palate and scientific knowledge. Following his favorite producers and preferred styles, Roman sought to make a version of the wines he loved.
