The wine is elegant with a fine balance and soft tannins, not typically rustic and masculine like other St. Estèphe wines. It is aged in wood (40% new oak) for 16 to 18 months.
"Tasted blind at the 2007 Bordeaux horizontal in Southwold. The Château de Pez 2007 is a little simple on the nose with notes of tar, dark berries and cold tea. The palate is medium-bodied with fleshy red-berried fruit, a dash of white pepper, cedar and tobacco, quite harmonious thought missing some depth towards the finish."
