We have 90% of Sauvignon Blanc in our blend, nearly undetectable when blind tasted because of the age of vines. We also have a secret weapon: 5% of Sauvignon Gris, that forgotten varietal with different levels of aromas: first grapefruit, then peaches, apricot and white flower, and a fresh minerality on the finish. That type of grape also helps the wine to age beautifully, adding some spices to the finish and some structure to the wines.

"Bright, pale yellow. Knockout nose offers lemon drop, pineapple, white flowers and minerals. Dense, lush and sweet but leavened by piquant acidity; offers a rare combination of silky volume and inner-mouth energy and perfume. Lovely intensity of lemon and pineapple flavor. Finishes quite firm, even a bit youthfully bitter, but with terrific length and lift. I can't recall a more promising white wine from this property. Range: 91-94"

Typically made from Semillon, Sauvignon Blanc, and bits of Muscadelle, white Bordeaux can be a fully dry table wine or, as in Sauternes, a deliciously sweet dessert wine. In other areas of the world, a Bordeaux blend consists primarily of Sauvignon Blanc and Semillon, either of which may be the predominant variety. Bordeaux blends can vary in style, but most have good acidity and often a mineral overtone.
