The 2005 vintage fostered such exceptional fruit that we believe our 2005 Estate Cabernet Franc may the best ever produced at Canoe Ridge. The wine's classic varietal character of rich blueberries layered with pepper, mineral and toffee nuances comes from a small block of Cabernet Franc vines in our estate vineyard. The intense, delicious flavors are supported by ripe tannins that are at once muscular and velvety. Vanilla tones from well-integrated oak character complete the aromatic and flavor complexity.
We hand-sorted the grapes on tables at the winery to assure highest quality, then fermented the must (crushed grapes) in stainless steel tanks. We gave the wine a 15-day maceration (skin contact) to fully develop the Cabernet Franc flavors. After gentle pressing, we aged the wine for 16 months in toasted French and Hungarian oak barrels (40% new). To enhance the wine's round, lush texture, Winemaker Christophe Paubert blended 15 percent Merlot with the Cabernet Franc.
Canoe Ridge Vineyard's estate vineyard, uniquely sited at a broad section of the Columbia River in eastern Washington, produces grapes of uncommon quality.
