Winemaker's Notes

Blend: 85% Cabernet Sauvignon, 15% Merlot

The 2004 Canoe Ridge Vineyard Cabernet Sauvignon was fermented in many small lots, which allowed each lot to be treated as a unique expression of the vineyard. By using a variety of fermentation practices and yeast strains, Canoe Ridge created individual components that were carefully pieced together for the final blend. They used a minimum of fining and filtration, and aged the wine for 16 months in a variety of oak barrels.

This lovely Cabernet Sauvignon opens to lush berry aromas. Rich, layered flavors of chocolate, blackberries and blueberries are complemented by vanilla and toffee notes. On the palate, the wine is round and full with a firm structure and soft tannins. A beautiful overall balance distinguishes this wine, making it a wonderful partner for a variety of rich foods such as grilled steak, lamb chops or Portobello mushroom lasagna.

Sheltering ridges limit...
