Alain Soutiran is a fifth-generation champenois. Tending to 37 acres of vineyards, most in Ambonnay, with a few acres in Avize on the Cote des Blancs, he is an artisan recoltant who makes four 100% Grand Cru wines from his hand-harvested vineyards. His reserve wine for the non-vintage bottlings is aged in Burgundian oak and the bottlings themselves are aged two to ten years on their yeast. He does not permit his vintage Champagne to undergo malolactic fermenation, a rare practice.
