Winemaker Notes

Impenetrable black with a concession of purple at the rim. Saturated dark fruit flavors of blackberry/mulberry fuse with notes of dark chocolate,Ribena and licorice. The "chocolate" spike unfolds with air, revealing cocoa bean and cherry liqueur components. The overt, aromatic contribution from the legendary, ancient Kalimna Block 42 vineyard offers soul, purity and character. The 100% new oak contribution is of academic interest only -it is completely absorbed. The palate displays an oscillation andjuxtaposition between a solid, assertive and muscular first impression, and later, an opulent, saturated and succulent demeanor.

Blackberry and loganberry fruit flavors glide across a supportive continuum of tannin and oak to reveal a profound synergy of Blackforest cake and bread & butter pudding flavors. What's promised on the nose is revealed on the palate - perceptions delivered.

Ideal with rare roast lamb cutlets.

    The 2005 Bin 707 Cabernet Sauvignon was aged for 16 months in 100% new American oak hogsheads. Already complex aromatically, scents of cedar, sage, clove, mineral, black currant, and blackberry waft from the glass. Smooth, layered, and bordering on opulent, this will be a long-lived Cabernet which should drink well for 25 years.

    Firm in texture, with a grip to the ripe red cherry and black currant flavors, which manage to poke through the tannins and cedary tobacco overtones and linger on the finish.
