Santorini Sunset Salad

1 (5 oz.) pkg. Spring Salad Mix
1 ½ cups garlic melba toast crackers, slightly broken
1 yellow, red or green pepper, seeded and cubed
1 large cucumber, peeled and sliced
1 cup Kalamata or other brine cured black olives, drained
½ cup minced onion
¼ cup toasted pine nuts
Red wine vinaigrette salad dressing
Optional for garnish and more intense flavor:
  • Fresh chopped Italian parsley
  • Fresh chopped oregano leaves
In large bowl, place salad mix; toss with parsley and oregano. Add remaining ingredients tossing with desired amount of salad dressing. If desired, garnish with Italian parsley and oregano and serve immediately.
