Xanadu Cabernet Sauvignon 1999

After a relatively fine and mild vintage, the grapes were harvested in superb condition, from selected vineyards in the Margaret River region. The fruit was then crushed and destemmed, before being fermented. Around a third of the components received an extended period of maceration after fermentation. The wine then underwent malolactic fermentation in tank, before maturing for 12 months in a selection of predominantly French oak barriques. A gentle fining was undertaken prior to bottling. The wine is deep red with subtle purple hues. The bouquet offers plenty of briary fruits including blackberries and savoury bay leaf spice, with underlying threads of dusty, smoky oak. This 2000 vintage of Cabernet Sauvignon is full bodied and rich. On the palate, it displays concentrated berry fruits, dark chocolate, and hints of tarry, liquorice characters. It is a powerful, robust wine with firm, ripe tannins and a warm, lingering finish.
