This 2000 Columbia Valley "old vines" cabernet sauvignon is produced from 100% Champoux vineyard which was initially plants in the early 1970's. The long, warm growing season gave a beautiful red wine of great balance and proportion, but with a level of richness that is typically seen only in the warmer vintages such as 1998 or 2000. The wine was pumped over and punched down two to three times per day in small stainless steel tanks. Average brix was right at 25, with harvest completed by the middle of October. Average fermentation ranged from ten to twelve days. After pressing and racking, the various lots were moved to new French chateau barrels for aging and maturation. In early August 2002, this wine was racked from barrel, assembled and bottled later that same month.
This 2000 "Old Vines" Cabernet Sauvignon is a rich and powerful successor to all past "Old Vines" cabernets. Flavors of ripe black fruits and cassis married with spicy oak and vanilla explode in the mouth! The color is dark purple and the flavor is concentrated and rich; the texture is soft yet firm. This red wine will benefit greatly from additional cellaring and with proper storage, should last fifteen years or more.
