Winemaker's Notes

Continuing a long, rich tradition of producing collectible Napa Valley Cabernet Sauvignon wines, William Hill Winery created Aura Cabernet Sauvignon. Defined as "distinctive atmosphere surrounding a given source, " Aura showcases our Estate-grown Cabernet Sauvignon fruit as well as the considerable skill of our winemaking team.

The 1997 William Hill Winery Aura Cabernet Sauvignon is an elegant, full-bodied wine, with concentrated black, inky color and lush blackberry and cassis fruit flavors. A rich, smoky oak character is gained from the Seguin Moreau barrels, while the François Frères barrels lend a sweet oak texture to the wine. Tannins are well-managed and structured, making this a true collectible, with aging potential of more than 15 years.

The 1997 William Hill Winery Aura Cabernet Sauvignon is an intensely rich, full-bodied wine that will pair well with rich dishes such as filet mignon. A succulent leg of lamb braised in a Cabernet Sauvignon reduction sauce will also highlight this Estate-grown wine.

Since 1978, William Hill Winery has produced wines from the cool southern regions of Napa Valley, including the Silverado Bench and the Carneros districts. The winery specializes in Chardonnay and Cabernet Sauvignon, producing Reserve and Napa Valley bottlings. Chardonnay grown in the cool climate and well-drained soils of Carneros typically offer brighter, more intense flavors and higher acidity than grapes grown in the richer soils and warmer temperatures at the upper end of the Napa Valley. The result are Chardonnays that are highly complex and multi-layered with crisp, bright flavors.

The Napa wine industry really took off in the 1980's, when vineyard...

Either way, this grape is responsible, as a whole or a partner, for some of the greatest wines in the world. In Bordeaux,...
