Somm Note

Winemaker Notes

Aroma: Lifted with sweet black cherry, cassis, black currant jam, red raspberry fruits with a hint of anise. Honeysuckle, tobacco and forest floor nuances add dimension along with the cedar, and spicy nutmeg of the oak.
Palate: Intense at entry with bright sweet fleshy currant, blackberry, and cassis fruits. Hints of dark chocolate and licorice add complexity to the intense black fruits. The flavors build into a rich, full bodied mid palate that has a mouth feel that is lush and harmonious. The finish goes on and on.
Food Pairings pairs well with steak or chops, beef or lamb.

Pretty much as good as Napa Cabernet gets. Shows the blackberries, black currants, blueberries and spicy plums of Oakville and scads of spices, and the tannin-acid structure is, in a word, superb. The oak elaboration is just about perfect, adding a tasteful layer of smoky, buttered toast. The finish goes on and on.

Classic Cabernet themes of cassis and black olives run through the length of this wine while careful accents of vanilla, caramel and a hint of sweet cream add a nice boost in richness. If just a touch tough and hot at the finish, the wine hints at polish and plushness to come, and its impressions of concentration, depth and continuity ease any doubts that it will do other than grow into real beauty with age.

A ripe, rich, supple style, with a pure core of ripe currant, blueberry and blackberry flavors, with spice and floral scents. Full-bodied and concentrated, with a finish that shows off mineral, graphite and loamy earth notes. Drink now through 2017.

A noble variety bestowed with both power and concentration, Cabernet Sauvignon enjoys success all over the globe, its best examples showing potential to age beautifully for decades. Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbecand Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.

Napa Valley, California

Home to some of the most sought-after Cabernet Sauvignon in America, Napa Valley’s Oakville district stretches across the center of Napa's valley floor and foothills between the Vaca and Mayacamas Mountains. This AVA is home to the legendary To Kalon Vineyard and Martha's Vineyard, as well as many powerhouse wineries including Screaming Eagle, Silver Oak, Robert Mondavi, Opus One, Far Niente and Groth.

The climate is generally warm and agreeable, resulting in year after year of favorable vintages. Summer days see a gentle tug of war between warmer inland air and the cool air coming in from the San Pablo Bay, creating an ideal environment to grow red varieties. Oakville's diverse soils, namely ancient sea bedrock, clay and gravel, are well-drained, and perfect for high-caliber viticulture.

Cabernet here is often bottled varietally but is also popular in Bordeaux Blends. Oakville wines are known for their silky, sensual textures, structured tannins, dark and brooding fruit and lovely aromatics. These age-worthy and prestigious wines are favored by collectors throughout the world.
