Unobtrusive, yet with much character. Subtle. A beauty when matched with a delicate pasta, sauced with the simplest, Marcella Hazan sauce recipes, no garlic, ideally the simple tomato sauces cooked briefly; also gorgeous with delicate cheeses as a first course appetizer, with a perfect, quietly beautiful bread.
