The Tahbilk Cabernet Sauvignon is a classic in every sense of the word - firm tannins, blackberry and anise characters, good depth of ripe blackcurrant fruits, minty and earthy.
The Wine Advocate - "The 2007 Cabernet Sauvignon is a little subdued with moderate aromas of cassis, black olive and smoked game plus an appealing mushroomy / earthy character. Elegant and medium-bodied, the palate lends medium-high acid and firm fine tannins. The finish is long. Still a touch mute and tight, give this wine another 2-3 years in bottle and drink 2013-2022+."
Established in 1860 Tahbilk is one of Australia's most beautiful & historic wineries, located in the Nagambie Lakes region of central Victoria (120kms north of Melbourne) one of the nation's premium viticultural areas.
The property comprises some 1,214 hectares of rich river flats with a frontage of 11 kms to the Goulburn River and 8 kms of permanent backwaters & creeks.
The vineyard comprises 168 hectares of vines which include the rare Rhone whites of Marsanne, Viognier & Roussanne, along with classical varieties such as Shiraz, Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec, Chardonnay, Riesling, Semillon, Sauvignon Blanc & Verdelho. View all Tahbilk Wines

New South Wales- home to Sydney and other tourist destinations, New South Wales has a smaller focused wine growing region, but many wines are a blend of these smaller appellations and so are deemed New South Wales appellation.
Western Australia– a small corner of Australia winemaking occurs on the opposite coast of the others. The largest state, Western Australia includes the smaller appellation of Margaret River.
Southeastern Australia– This appellation encompasses the states of South Australia, New South Wales and Victoria. Grapes are often trucked in from at least 2 of these states for crushing and bottling, giving the wine a more general appellation of origin. This is the broadest appellation in the country.
