Our Salus Cabernet Sauvignon showcases a wine from our estate vineyard that is more approachable in its youth, and is produced mainly from fruit from our newest plantings. These new selections produce grapes with soft tannins, ample depth and body, and aromas and flavors of ripe berries and spice.
The 2000 vintage shows aromas of blueberries, blackberries and rose petals, layered with notes of white chocolate and baked bread. Tannins are mouth-filling, yet silky and supple.
This Cabernet Sauvignon is full of youthful exuberance and vivacity, but will continue to open and become more expressive in the bottle, and should age beautifully for 15+ years. The wine was aged for 20 months in French oak, two-thirds of the barrels being new, and the remainder once-used.
