The 2005 appears to show great promise in the grape growing world. It started as an average year with moderate rainfall and mild temperatures throughout the winter months. In March, we saw the onset of spring shoot up suddenly leading to temperatures well into the 80's for over a week. This rapid heat spike caused vines to suddenly awake from their winter dormancy and grow rapidly. Temperatures soon fell back
to normal pace with more regular summer weather.
The fruit for this Cabernet Sauvignon was harvested during the cool hours of early morning to maximize fresh flavors. Crush occurred in our cellar prior to fermentation and maceration on the skins, after which the wines were drained and pressed to barrels for maturation. Nineteen months later, the wines went through final evaluation to complete the blend.
This is a very elegant and balanced wine with nicely focused black cherry and currant flavors on the palate. Hints of cinnamon, decar, vanilla and mocha give the wine additional complexity and grace. While approachable now, this wine will age nicely over the next 10 to 15 years.
Had this with a fabulous slow cooked pork loin recipe and it was spectacular!
very dissapointed with this wine. would not buy again. was not smooth. very ordinary and overrated. ive had much better for the price. can't believe it rec;d. the rating it did
