The 2007 Shiraz has a very fragrant nose; with blueberry and dark cherry fruit characters, floral violet aromas and a background of complex cocoa and spice. The palate starts with lots of dense berry fruit, which is ripe and juicy and yet also very fresh, this develops further with savory toasted spices and brioche characters coming through. This is an elegant wine with a fine and silky tannin structure. The wine is drinking well now, yet can be cellared for quite a few more years.
"Shirvington's 2007 Shiraz spent 14 months in 80% new, mostly American oak. It displays an excellent nose of cigar box, lavender, cocoa, black cherry, and blueberry. This leads to a full-bodied, dense, structured Shiraz which comes off as just a bit sinewy. Aside from that, it has plenty of savory fruit, good balance, and a lengthy finish. It will require 3-4 years of additional cellaring and should be in full bloom from 2013 to 2027."
