Seven Hills Columbia Valley Cabernet Sauvignon 2003
Cabernet Sauvignon
from Columbia Valley, Washington
winemaker's notes:
Grapes: Sourced from diverse sites throughout the Columbia Valley. 2003 was a vintage of great warmth and an accelerated maturation period. As with all our wines, the grapes were hand-picked; harvest weather was perfect. The blend is primarily Cabernet Sauvignon, with smaller portions of Merlot and Cabernet Franc.
Sensory: A full-bodied red of deep color. By nose and mouth it shows black and red fruits, sweet spices, vanillin and red plum overtones. The diverse vineyard sites show in a broad range of flavors and a sound structure with depth and length. Balanced tannins and a slight brightness make this an inviting mealtime choice. Cabernet Franc and Merlot add a softness and perfume to the core Cabernet Sauvignon.
Cellar Notes: Bottled in July, 2005 after aging in our cellars for 22 months in a mix of European and American barrels. Will benefit from medium-term cellaring, gaining additional integration and flavor development over 12-24 months. An excellent example of the qualities that have made Northwest Cabernet enjoyable, ageable, and intriguing.
