More than a century before champagne, the Benedictine Monks of the Abbey of Saint-Hilaire in the Southern foothills of Limoux had created France's Very First Sparkling Wine.
Today, over four and a half centuries later, Saint-Hilaire Blanquette de Limoux is made in the very same foothills of Southern France.

Hush hush - put a cork on it!
Please don't tell everybody, but this is the best sparkling wine ever and "Blanquetteers" want to keep it that way.
By the way did you notice that it is naturally fermented in the bottle? Paolo

I purchased a case for the holidays, though I had never tasted it before. I liked the name and the story of the decadent monks. The Champagne's arrival led to me inviting more and more friends over a period of 3 days, to come taste the Champagne. Now it is all gone. :) It is buttery, more so than other champagnes, but that makes it distinct; a quality taste at a fantastic price point.

The first time I tasted Saint-Hilaire was at Paris Hotel in Las Vegas since it is their house champagne. Since then it has been my favorite sparkling wine and I have turn several of my friends to be their favorite.
