The 2005 CASK Cabernet has layers of ripe, red cherries, plum, vanilla, cocoa, and toast. The wine is remarkable now, especially if served with intensely flavored meats or cheeses, but it also can be aged for 10 years or more. This is a monumental vintage for CASK.

"Black-garnet hue with a ruby rim. Upfront aromas of black cherry, coffee bean and graphite. Opulent cherry-chocolate flavors laced with minerals and youthful wood tannins. Stylish, lasting finish showcases purity of fruit (98% cabernet/2% petit verdot), balance and structure."

I would buy this wine again
I admit some of my enjoyment in this wine is based on it being organic. That aside it is a great wine which is nicely balanced.

I would buy this wine again
I'm glad someone else found this wine interesting enough to cellar for a 8 year comparison. I thought it was an excellent mid range: substantial body and character without overly narrow appeal. This is a perfect classy affordable wine for everyday use: hosting/gifting. I only buy my wine wholesale, so $100/per case to test 12 bottles is excellent. I open the first two over the course of the week as a diagnostic, test a few more with meals and friends, and cellar the remaining half for tasting in the future. So economical and fun!

  A great cabernet for anytime - 11/27/2009
I would buy this wine again
I served this wine at a small gathering of friends. I could tell just by the smell of the cork this was going to be good. It was full bodied and hearty yet very smooth and fruity. We wanted to open my 2nd bottle but I am saving that for an 8 year taste comparison.
